It’s hard to believe that New Year’s was just a little over two weeks ago – it seems longer. I’m not much of a party person. In fact, I’m really just a homebody. Since my brothers were busy filming a NYE wedding (what??) our usual celebrations had to be postponed. My mom, sister, and I had to settle for a quiet(ish) – but delicious – dinner out, getting hooked on the Great British Bake Off (I’m so sad that only one season is available in the U.S.), watching a girls movie, listening to fireworks, eating leftovers from dinner then cheesecake, drinking hot chocolate, and then just hanging around on social media (read Instagram) until two. Then bed at three. THREE – I hardly ever go to bed at three!!

Because these biscuits will certainly ignite all of those emotions. Especially if eaten warm and bathed in butter…or honey.

This is the first time biscuits have appeared on here and quite frankly, it might be the last – I’m not sure I can think of another biscuit to match these! The flavors of roasted apple(!), bacon(!!) and extra sharp cheddar coming through are too good to be true. But it is! 

Here, have a seat; that’s right. I’ll pour the tea, one lump or two? What’s that? honey? Why, I like honey in my tea too! Here are the biscuits – will that be butter, jam, or honey?

The lowdown: These puffy cream cheese biscuits are taken to a new level with the addition of roasted apples, crispy bacon, and extra sharp cheddar cheese. When warm, you can see the melty cheese in the biscuits! Packed with flavor and love, these biscuits are sure to brighten your morning – or afternoon…or evening…or, well, you get the point!

Roasted Apple & Bacon Cheddar Biscuits

  • 1 (12 oz) package (or 12 slices) bacon
  • 8 oz extra sharp cheddar cheese (shredded or block)
  • 2 medium sized apples (I used Honeycrisp, but Granny Smith would work well too)
  • 1 1/2 C. all-purpose flour
  • 1 1/2 C. cake flour
  • 1 tbsp. granulated sugar
  • 1 tbsp. baking powder
  • 1/2 tsp. salt (I used sea salt)
  • 3/4 tsp. baking soda
  • 4 oz cream cheese, cut into small chunks (about 1/2")
  • 4 tbsp. unsalted butter, cut into small chunks (about 1/2")
  • 1 C. + 1 tbsp. buttermilk (I used full fat, it's so thick and creamy!)
  • Topping (optional)2 tbsp. unsalted butter
  • 1 tbsp. honey


    PrepFreeze butter and cream cheese for 30 min.
  1. Preheat oven to 375° f.
  2. Line a baking sheet (preferably one with sides as opposed to a completely flat one) with foil or parchment paper.
  3. Place slices of bacon on baking sheet and bake for 15 minutes or until nice and crispy.
  4. While bacon is cooking, cut apples.
  5. Cut apples into eighths (if some of the slices are really thick, cut those in half) and then into small chunks.
  6. When bacon is done, remove from oven and let cool slightly.
  7. Retain oven temperature.
  8. Place bacon on a paper towel lined plate and set aside.
  9. Remove foil and any excess grease from sheet.
  10. Line baking sheet with parchment paper.
  11. Spread apples evenly onto baking sheet and bake for 10 minutes or until dry to the touch.
  12. While apples are roasting, shred cheese if it is in block form. Set aside in fridge until ready to use.
  13. Let apples cool slightly and then transfer to a bowl/container and place in the fridge until ready to use.
  14. Crumble bacon (make sure not to crumble it too small) and set aside.
  15. Turn oven temperature up to 450° f.
  16. Do ahead: The cooking of the bacon and cheese shredding can be done the day before.
  17. For the biscuitsLine baking sheet with parchment paper. (the same sheet can be used, if you like less dishes :)
  18. In a bowl, mix together crumbled bacon, cheese, and apples, set aside.
  19. In a food processor pulse together, both flours, sugar, baking powder, salt, baking soda, cream cheese, and butter until mixture resembles a coarse meal.
  20. Transfer to a large bowl and stir in buttermilk. Make sure not to over-mix; the dough will be slightly dry.
  21. Turn the dough onto a lightly floured surface and knead just until the dough comes together.
  22. Pat dough out into a fairly large circle. Place 1/3 - 1/2 of apple, bacon, and cheese mixture onto dough. Fold in dough and knead briefly until filling is just combined. Try to work with the dough as little as possible; overworked dough will result in tough biscuits!
  23. Pat dough out again and add remaining filling and repeat the former procedure. Keep in mind that some of the filling will fall out of the dough - this is okay.
  24. Roll dough into a rectangle that is 10" long, 7 1/2" wide, and about 1" thick.
  25. Using a pizza slicer, cut into 15 (2 1/2") squares.
  26. Place biscuits on baking sheet, placing about 3/4" apart.
  27. Stir 1 tbsp. honey into 2 tbsp. melted butter and brush over tops of biscuits.
  28. Bake for 8 -12 minutes or until golden brown. See note below!
  29. Serve warm!


Keep in mind when checking for doneness, that the biscuits may appear undone due to the melted cheese inside. If you slice one open and look in the middle, you may get a better idea - but look closely and don't be fooled by the cheese! ;)
